A cut above street food is this bare-bones place in the dense, cacophonous Old City market district that's been in business for more than 100 years. It serves only one dish, fried fish, and it's great for lunch. Though there are a few tables on the ground floor, it's best to navigate the rickety stairs to one of two rooms with tenement green walls and tables, some communal, some not, seating about 70. There is no menu. Each two to four diners get a tabletop charcoal brazier with a skillet in which sizzle crispy pieces of boneless freshwater fish coated with golden turmeric and a whiff of pepper. You're given basil, cilantro, dill and scallions to add to the pan while the fish is cooking; rice noodles, peanuts and several condiments, some chili based, for extra seasoning.

Beer and soft drinks are available, but there are no napkins. Instead, there are plastic-wrapped scented wipes. Regulars know how to open them -- by holding the packet tight until the plastic balloons and snaps open with a loud pop. The service is perfunctory.

Hoa Sua Restaurant (15 minutes by taxi from Viet Anh Hotel)

At this busy cafe, with a restaurant and terrace run by disadvantaged students who earn the chance to study at the seven-year-old Hoa Sua Vocational Training School, choices are broad, with something for everyone: pizza, French charcuterie, tournedos Rossini and Vietnamese menus. For a light meal the school's restaurant serves quiches, salads and French onion soup, and a dessert menu that offers crepes, tarts, chocolate mousse and thick fruit smoothies - all reliably good. There is also an excellent pastry shop on the premises.
